ohh yum. I love those little taquitos that come in a box… a little too much. They’re really not worth the money (we only splurge when they’re on sale), but they’re so quick to take out of the freezer and eat. I never nuke ‘em, they get too soggy – I saute in a little butter and get them crispy. Then of course they’re dipped in sour cream and salsa and life is good.
But then I finally tried the recipe that has been floating around the blogosphere for over a year. Homemade taquitos! Baked, not fried. Buuuut after I baked them I fried them in a tiny bit of butter. I like the flavour – but that step is totes optional
So you don’t need much for this recipe – it would so SO super easy to make a bunch and stick them in the freezer – a much healthier and transparent version of the ones you can buy in the store. All you need is some leftover meat of some kind (shredded beef/chicken/pork, ground beef, ground chicken, whatever!), some kind of sauce (bbq, salsa, ranch, buffalo, whatever!) and some tortillas. You can then add cheese, any veggies, beans, rice – you could saute some mushrooms and make vegetarian ones! I guess what I’m trying to say is that this recipe has endless possibilities for customization.
I happened to have leftover slowcooked beef, and Jack Daniels. Really what more do you need in life?
Here’s what you need if you want to do it just like me: A bag of small tortillas (or make your own!), leftover pulled beef, shredded cheese, homemade jack daniels bbq sauce (yum), dips!
+ Warm up the tortillas in the microwave between 2 paper towels before you roll them.
+ Even if you use a bottled bbq sauce, warm it up in the saucepan before you add the beef. It gets nice and sticky and flavourful this way – you won’t be disappointed.
Jack Daniels BBQ Beef Taquitos
Recipe adapted from Our Best Bites
approx. 1 1/2 cups shredded beef
package of 10 tortillas
about 1/2 cup sauce (recipe for JD BBQ sauce below)
1 cup shredded cheese
Jack Daniels BBQ sauce
1/4 cup ketchup
1/4 cup original Bulls Eye BBQ sauce
1/4 cup Jack Daniels
1/2 cup brown sugar
1 tbsp garlic
1 tsp seasoning salt
1 pat salted butter
Mix all ingredients in a sauce pan over medium heat, allowing the brown sugar to caramelize and get all bubbly. Simmer on medium-low until reduced.
Preheat oven to 425.
Add beef to sauce and set aside. Microwave tortillas until pliable. Add 2 heaping tablespoons or beef to the middle of the tortilla and sprinkle with cheese. Tightly roll and place seam down on parchment lined baking sheet.
Bake for 20-25 minutes, until edges are golden brown.
Now you’re ready to eat! I went one step further and fried them quick in a few tsp of butter, so try that if you want them super crispy.
