Recipe: Peach Berry Whiskey Syrup

Apologies for the simple posts – this week has seemed hectic for no real reason. Maybe it’s because my birthday is this upcoming Sunday and I definitely feel like it’s coming too soon. It could be paired with disappointment that I don’t get to throw a huge, elaborate costume party like usual – although I am having a quaint tea party with a few friends and it will be SO lovely!


I’m not sure what my problem is, but I do know that I’ve made this twice this week. Once with Whisky to top Ice Cream, and once with Coconut Rum to top.. Pancakes. yes it was a boozy morning!


It’s super easy – you can use fresh or frozen fruit. This time I used frozen because I had some to use up – if you’re using frozen, defrost for one minute in the microwave, then throw onto a pan and turn the heat to medium. (I used 1 cup of fruit altogether, 1/2 cup peaches, 1/2 cup mixed berries). Add 2 tablespoons brown sugar, a pat of butter and a splash of alcohol (optional of course). Let everything simmer over medium heat, stirring occasionally, until the juices are slightly syrupy. Turn off heat and spoon hot over icecream or pancakes. or icecream AND pancakes. It keeps well in the fridge, but it’s hard not to just eat it all at once.

  5. Adding more peaches or a liltte bit of salt might happen. Otherwise I might just make some sort of pie/piecrust out of it. Or maybe add it to plain oatmeal for flavor. I’m not sure what you’re planning on using it for but maybe just changing its purpose will help.
