Recipe: Spicy Shrimp Mac & Cheese

Hey folks – I thought we should delve into the realm of savoury goods, as Monday’s post was extra sweet.

I had a crock pot disaster. I admit it! It was an absolutely disgrace and waste of such good ingredients! What was it? Well, it was a Crockpot Macaroni & Cheese recipe.

In retrospect, it sounds ridiculous. My dad is a chef, and when I told him about the disaster he said “Why didn’t you just make a roux?”. Making a bechamel is so freaking easy and makes such a creamy white base for all your cheese to melt in – so why on earth would I put cups and cups of shredded and cottage cheese into a slow cooker and think it wouldn’t create a huge blob of crusty disgustingness?

Well, I learned my lesson – and this recipe was born of it! It’s basically a simple cheese sauce recipe with the added spice of cayenne pepper and some shrimp. Because we love shrimp – but feel free to omit it!

Recipe Tips:

+ Use whatever cheese you have on hand! The best kinds are ones with strong flavours – try a smoked applewood cheddar or an old white cheddar. Be creative – but know that if the cheese is mild tasting, your sauce will be too! Just add some herbs and spices to liven it up! Or hey, throw in a tablespoon of Cheez Whiz, I’m not judging.

+ I like to add meat to make it a meal. To make it extra special – throw it in a casserole dish and sprinkle breadcrumbs and extra shredded cheese on top. Broil until bubbly and golden brown.

Spicy Shrimp Mac & Cheese

 

Ingredients

2 tbsp butter

2 tbsp flour

1 cup milk

3 large basil leaves (optional)

1 tsp cayenne pepper (add more for more spice!)

1 tsp paprika

1-2 cups grated cheese

salt & pepper to taste

1 cup defrosted, peeled shrimp

cooked pasta

In a large saucepan, melt butter over medium-low heat. Add flour and whisk. Slowly add one cup of milk and whisk. Simmer 5-10 minutes or until white sauce is velvety and smooth. Slowly add grated cheese and stir until melted. Add chopped basil, cayenne, paprika and salt and pepper to taste. Don’t be afraid to add a bit of salt to enhance the cheese flavour!

Increase heat to medium. Add shrimp and cook until pink. Add to drained, cooked pasta and enjoy! I like to sprinkle a little parmesan on at the end – but this sauce is so smooth, creamy and delicious that your eyes will roll into the back of your head. I guarantee.
